Hiya everyone,
Yes it's Halloween and a lot of us will ne scooping out the orange seedy goodness to make way for our artistic spooky impressions.
However, hold up before you bin the seeds. The seeds are packed full of vitamins, minerals, anti-oxidants, as well as amino-acids.
If you can't bring yourself to eat them raw, a good way of consuming the goodness is by roasting the seeds on a low heat.
So get out the roasting tray and turn on your ovens, remember to use a low heat to preserve as much goodness as possible.
Around 170f/180f
Scoop Wash away the pulp Add a glug of oil (I usually use avocado or coconut oil) seasoning of your choice (I used Cayenne chilli powder and freshly squeezed lemons) Mix together Spread evenly onto a baking try
Bake for about 10-15mins or until golden brown or when you can hear the popping.
Keep an eye on them while baking and shuffle them around the tray every 6-8 mins.
Take out of oven, leave to cool and enjoy
Store in an air-tight container.
Fennel or Cinnamon are also good seasonings to try.
